Thanks for the great review!
Two things I would like to comment on:
1) In your example, the cards about the breweries would actually be a bit difficult to learn (7 breweries), you could consider splitting the set into separate simpler facts, for more optimal memorization. This is well explained here (rule 9): http://www.supermemo.com/articles/20rules.htm
2) You used the term "cramming" for what we call "reviewing". In the Anki jargon, "cramming" is an optional feature that asks you all the questions, ignoring the spacing schedule, it is useful a few hours before an exam.
